The first person I talked to about a recipe was Kajsa, and we ended up having such a great conversation about food and culture. The dish she picked were Danish meatballs and for her family it is something that is on the table at every holiday.
Her family is from Scandinavia, and when they moved to Canada, they wanted to celebrate holidays like Thanksgiving. But instead of making the typical Western holiday food, they kept making Scandinavian dishes. It became their way of being part of Canadian traditions while still holding onto their own culture. I love that. There’s something special about embracing the place you’re in without letting go of your roots.
What’s also interesting is that there isn’t really a written recipe in her family. It’s just been passed down by teaching she learnt how to make this recipe through watching and doing. Together for the book we a recipe that seems pretty close to what her family makes, but it’s not exactly the same. At some point, we have planned to have her show me how they make it so I can learn from her directly. I am really looking forward to that! Not just for the food, but for the experience of learning it the way her family has always done it.
