Talking with Ashley this week, she told me about a chocolate cake recipe that has been in her family for years. It’s the cake they always make for birthdays, and she said it never really felt like a birthday celebration without it.

When Ashley sent me the recipe, I have to admit I was a bit confused by one ingredient: sour milk. To me, that just sounded like milk that had gone bad… which didn’t seem very appealing for a cake! But Ashley explained that it’s actually just regular milk with a small amount of vinegar added to it. She said she swears it makes the cake taste better.

That got me curious, so I looked into it and found a cooking blog that explained why it works. Adding a bit of acidity to cake batter with vinegar being one option it can actually help enhance the flavours. It also contributes to the leavening and helps tenderize the cake. Sour milk helps keep the cake moist and soft, giving it a much nicer texture instead of a dry crumb.

Ashley also shared a picture of herself on her birthday with the cake! It was really sweet to see and made the story feel even more special. It’s great to see how something like a cake can become such an important part of family traditions and memories.
